Hanging lamb

Hanging lamb. 
I hung up the lamb in the old chimney and have it smoked with birch wood and coal.
The Norwegian lamb comes straight from the mountains or forests and got only as fodder grasses and Herbs. And the marinade consists only a couple of herbs, vinegar and salt.

The dripping makes a beautiful crust that tastes great. The rest of the dripping is a base for the sause.

Stuff me!

Stuffed tomatoes with garlic bread. The stuffing was made from bread crumbs, squash, tomatoes and parsley, maybe some egg as well, can't remember. The garlic bread is made with freshly chopped parsley and garlic mixed in butter on french baguette.

 

Traditional Norwegian

Made meat loafs with mashed potatoes, mashed peas and cranberries, a typical Norwegian dish. Had my homebrewn IPA with it. Good match, good meal!

Made some for my love as well. ;)



Shashlik skewers

My brother visited me and we decided to celebrate with good food. We made some hummus and a hot tomato dip and grilled this nice skewers in the pan. Tasty!

I love cooking with others, lots of fun was had!

Bacon pancakes

Had lunch the other day. Nothing beats thick cut bacon!

Birthday meal (with beer)

I gave myself a nice present this year, food made with beer!

The appetizer were onion rings fried in beer batter with parsley and sweet onions in the batter. They were gone so fast, I couldn't even take a picture ;)

The main course was a beer marinated entrecôte with homemade chips (french fries for you merricuns) and an onion stew.

The meat was marinated in Nøgne Ø Brown ale, soy sauce and this stuff here:

Ginger, garlic and hot pepper. Then I bagged it up and put it in the fridge for four hours. The meat was so tender and tasty, it exploded and melted in my mouth. It was a bit like having a taste bud orgasm...

The chips were just fried potatoes with a sour cream dipp.

The onion stew is a bit special,though. It's made from onion, red onion, green onion and garlic, first fried in oil, then cooked in beer, a part of the marinade and a generous piece of butter and parsley right before serving it. Delicious!


The dessert was easy to make but none the less very good. I took some chocolate icecream out of the freezer and waited for it to go soft.

When I could stir it with a spoon, I mixed about half a bottle of strong porter with the icecream and put it back in the freezer. Now I just had to stir it once every half hour to prevent icicles forming, and I had a delicious icecream that made me (a bit) drunk. Perfect!

Every course was accompanied with a fitting beer. The onion rings were devoured with Brewdogs 77 lager, the main course with a strong Bockbeer and of course porter to the icecream.

I like having birthday!

MUSHROOM TIME-THIEF BURGER

Mushroom time-thief Burger

Onions, and mushrooms in a DRY pan over medium heat for a long roast,
until most of the water is removed.
Put apples and in oil pickled garlic with red wine or balsamic vinegar together and let it stay till the mushrooms are done. Mix it. The whole process can take a long time.

The minced is mixed with apple cider vinegar and smokeoil.

Put the mince in the bottom and cover it with the stuff, take it from the heat and let it stay for a while.


Hmmmm, butter!

 Eggs and spices.
Use it as a lock.

Nice whether makes the waiting easier.

Potato salad and Bratwurst

Just a picture from today's dinner.

The potato salad is made with pickles, raw onion and fried bacon.

The salad contains radish, lamb's lettuce and radicchio on a mustard vinaigrette.

Just a soup

Made a Chinese beef soup the other day. It's one of my favorite dishes, easy to prepare and really tasty. This on is made on a base of hot bean paste, beef broth, minced garlic and ginger, onion and soy sauce. The veggies are sweet red pepper, fennel, green onions and squash. The beef was only cooked, not fried.

 

When the soup is done, you put noodles in a bowl, some leave veggies, spinach f.ex., on top and soup on top.

Delicious!

Lunch time

I found this nice English sausages in the shop and improvised with stuff I had in the fridge.

On top of a "lompe" I had some Aioli, then tomatoes, avocado, a marvelous mushroom pesto and the sausage of course.

Then I topped it with another "lompe" and mayonnaise, just because ;)

Was very good, so I'm going to eat it again some time!

More Chinese Food

We made us a nice meal yesterday, with honey fried Chinese cabbage, garlic spinach, green beans with hot pepper and sesame noodles.

The tricky part was to cook and fry everything at the same time, since the dishes are all quite fast done and need to be served at once.

The finished meal. The drink of choice today: Brewdogs fantastic "Trashy Blonde". Sorry for the blur, I need to get a better camera.

That's the garlic spinach, fried with lemongrass and garlic and brown sugar and soy sauce.

Beans fried with hot pepper, rice wine and soy sauce.

 

Chinese cabbage fried in rice wine, orange juice, honey,hot pepper and soy sauce. This one was my favorite. Next time I won't put it in a red bowl though, as it doesn't look as good as it actually was.

I didn't make a picture of the noodles, but basically you make dressing off sesame oil, peanut butter, garlic and some other stuff and put it on the freshly cooked noodles. Tastes really good!

Smoked rib`n roast


 Smoked Rib`n Rost

First of all the ingredients.
The roast was wrapped with a beer marinade over neight. The rib is rubbed with a BBQ pork rub.
I've brushed everything with a marinade. The beef with beer, apple juice, apple cieder vinegar , spices and worthchester. And th rib with apple juice and in the end a tomato-basedBBQ sauce.

 And of course, BBQ sauce. 
 

 Everything on the grill and after a few minutes.


And unfortunately (probably because I was blinded by starvation), I have made ​​no pictures and that I only noticed lat.
